In the Mail app on your Mac, do one of the following in your message. Choose Format > Make Plain Text. Plain text format doesn’t include formatting (such as bold or italic text) or items like tables and images, but is readable for all recipients. With iOS 5, Apple did add a limited rich text formatting capability. You can see it in action in the Mail app, where you can select among bold, italics, and underlined text when composing a message. “Choose Format > Make Rich Text. Rich text (HTML) format can include formatting, tables, and images, but may be unreadable for some recipients.” but even with this option enabled you cannot paste HTML into an email.
The new features keep pouring in as Scott Forestall, the man behind iOS, announces update after update in the new iDevice software. While we knew that a new notifications system and other revamps were coming, not much was said about the iOS Mail app.
You can also write or respond to emails with rich text formatting. So, if you want to change the font, add bold lettering, bullet point a section, or just slap an emoji in there, it's all available right from the toolbar at the top of your new email. While built-in Notes app does use the plain text (.TXT) format, it does so only when exporting a note to the Files app because the app is primarily focused on rich text styling. Rich Text Format
There wasn’t really anything wrong with the previous version of the iOS Mail app, but it did leave a couple of things to be desired. Apple must’ve gotten wind of jailbreak tweaks like Rich Text for Mail, because they just included it and other features in iOS 5…
The revamped Mail application in the new iOS allows you to give your emails a little flavor by making text bold, italic, or even underlined. The updated app also allows you to indent paragraphs and flag messages.
There is also a system-wide dictionary built-in to iOS 5 that is accessible in the Mail application. If you don’t know what a word means or if you are using it correctly, simply hold down on it like you normally would to select it. Instant definition.
Apple hasn’t forgotten about enterprise users either. For folks who need that extra layer of security, the iOS Mail application now supports encrypted email. If someone sends you an encrypted email, you must have their certificate to few the message.
Although it’s nice to see features like rich text formatting becoming native in iOS 5, it seems to prove once again the power of the jailbreak community. After all, apps like Backgrounder and Cycorder made multitasking and video recording possible before Apple ever implemented them.

Since this is a new installation of Office I'd suggest that you first do the following:Free Rich Text
- Confirm that Office is fully updated [14.2.4 is current]
- Run Apple's Disk Utility to repair disk permissions
- Restart the Mac
I'm not sure what you're referring to here, though;
'Microsoft Word does not see Rich Text (the option to open in Rich Text is grayed out in the OPEN WITH dialogue box'
Apps For Format Rich Text Newsletters For Mac Mail
Do you mean that files with an .rtf extension are dimmed in Word's File> Open dialog? If so, check the Enable dropdown which probably defaults to Word Documents. Open the dropdown & select All Readable DocumentsorAll Office Documentsor Rich Text Format Files. Either should make the .rtf file selectable.
If the statement means something else, please clarify specifically where & how this is being seen & the exact wording involved.
Based on other reports I've seen recently, it appears that Apple may have made a change to the manner in which Mail handles attachments -- at least in Lion & Mountain Lion. I'm not using either, so I cannot verify but I have not experienced it here using Mal 4.6 in Snow Leopard. If that's the case it's probably a security issue, because opening attachments in an email program can bypass virus checks & let the bad guys in.
